Molecular Traceability of Food

Learning objectives
The course aims at providing students with the knowledge required to use and implement biomolecular-based analytical tools for traceability in agri-food chains. In particular, the course will address the detection and quantification of GMOs, food allergens, molecular determinants of intolerance, and harmful or fraudulently added chemical species using proteins and genomic material as reliable markers.
Expected learning outcomes
The course will have a strong hands-on connotation, so that - at the end of the course - the students will be able to manage the most common biomolecular methods of food analysis and to develop and implement specific molecular tools for the biomolecular analysis of food products.
