Learning objectives
The purpose of the company internship is to allow learning of the production dynamics of the winery, especially in the preparatory phases for the harvest and in the winemaking phases. The operational aspects of the practices of monitoring and managing the ripening of the grapes, the production and delivery of the harvest, mashing and winemaking, the analytical control of grapes, musts, fermentations and wines, and the management of the machines involved in the transformation process will be learned.
Expected learning outcomes
At the end of the practical-applicative internship, the operational skills typical of the oenologist's activity will have been acquired in an eminently practical way. In particular, the competence to fully describe and rationally implement at least one winemaking process, among those learned in the activity, starting from the selection and management of the grapes in the vineyard until the completion of alcoholic fermentation.
