Toxicology: Detection of Contaminants and Illicit Substances

Learning objectives
The course will provide the student with useful tools to recognize the risk linked to the presence of illicit substance residues and environmental contaminants in products of animal origin. To this aim, the methods of controls carried out in Italy and the European regulations on residues in products of animal origin will be treated. At the end of the course, also through practical exercises, the student must be able to carry out critical assessments concerning the residues in food.
Expected learning outcomes
The course is aimed to make students aware of topics of food toxicology, related to the use of drugs, substances illicitly used in animal husbandry or the presence of contaminants in food of animal origin. For this reason, elements of risk assessment will be provided, in particular risk characterization, through practical examples available from data in the literature. The laboratory practise will make students aware of the problems connected with the search for residues and therefore with the analysis of food matrices and the evaluation of results in the event of non-compliance.
